Remember how I told you guys I was going to start sharing more 20 minute meal ideas? Well this is the second installment, and this is a great one. The flounder is light and tasty, the breading nice and crispy, the cabbage mix adds crunch, and the vinaigrette a little sweetness. It is a wonderful combination, and one my whole family loved, even most of my kids!

I grew up in San Diego area where there is a plethora of tacos to be found, many of which are really good. When I moved to Utah, finding those really good tacos became a little more challenging. I didn’t know which hole in the wall restaurants were those hidden gems, and which were to be avoided. So I started making my own tacos. And I made lots of them and still do. They are part of our regular dinner rotation, and an often requested dinner among family and friends.

These Flounder Fish Tacos are now going to be part of that regular rotation. They are so good and really quick and easy to make. You can buy the Treasures from the Sea® and/or Daily Chef™ Breaded Flounder Fillets, as well as Virginia Brand® Vidalia Onion Vinaigrette, and even the cabbage mix and toppings at Sam’s Club. That’s what I did!

Ingredients

  • 4 6-inch corn tortillas
  • 2 Treasures from the Sea® or Daily Chef™ Breaded Flounder Fillets
  • 2 Tbsp Virginia Brand® Vidalia Onion Vinaigrette
  • 1/2 cup shredded cabbage and carrot mix
  • 1 Tbs butter optional

Garnish

  • 1 lime quartered
  • 1 Roma tomato cut into chunks
  • 1/2 and avocado cut up
  • Cilantro leaves
  • Sour cream
  • Hot sauce

Instructions

  • Microwave tortillas for 40 seconds, or if you want them to be crispy, put on griddle heated to 350 degrees to warm and crisp up using a tablespoon of butter to help make crispy

  • Cook flounder fillets following package directions.

  • Mix vinaigrette and cabbage mix together.

  • Divide fillets and cabbage mixture evenly over each tortilla.

  • Add a little sour cream, guacamole, tomatoes, avocados, cilantro or hot sauce if you want.

  • Serve with lime and enjoy.

Do you blame me? I cooked my flounder in my fryer, so it took only 4 minutes, during which time I heated up my tortillas. Then I assembled, and chopped up some garnish for the top. So it was only about 10 minutes for me, but if you are baking the flounder it will take a bit longer. But even then, you are looking at less than 30 minutes for a fantastic meal!
