I made this taco chicken soup recipe and it was fabulous! My kids say this was one of their favorite soups, which says a lot, because I can make some delicious soups. I personally love it because it is fool proof and very frugal friendly. It is perfect to feed a crowd and so easy to prepare.

This soup is a perfect soup for your game day parties. It is so easy to throw in the crock pot so you have time to watch the game and hang out with your friends and family.

We have made this tasty soup several times before so the family was excited I was making it again. My kids like the white beans because they are softer then regular beans.

If your family doesn’t like beans, smash them up before you put them in the soup. You will get the protein without anyone knowing they are in there.

Freezer Friendly Soup:

This is the perfect soup to put in the freezer. We have meal prepped by putting the uncooked ingredients in a ziplock freezer back. Then when we are ready to cook it, we just throw in the bag of ingredients in the crock pot.

You can also place the left overs in freezable containers to make an instant soup for lunch or a leftover dinner. This is a perfect lunch for my husband. I know he is getting a good lunch and avoids fast food.

Perfect soup for any budget:

Soups are a great way to use up 1 or 2 chicken breasts that are left in the freezer. It is a great way to stretch your protein and get meal out of it.

When I don’t have a lot of chicken and I am feeding a large crowd, I will add more beans and tomatoes. I also like to toss in some green bell pepper. The kids never know as they cook perfectly in this soup.

A good crock pot is a must:

If you work all day, you may want to invest in aprogrammable crockpot. They are awesome because you can set them to start later, or to stop and switch to warm once the dinners are ready.

Also, I love using crock pot liners. After dinner instead of scrubbing and washing the insert, you can just toss the liner in the trash. It is practically no clean up.

Ingredients:

  • Boneless skinless chicken breasts – these can be fresh or frozen
  • White beans – I used great northern. You can substitute pinto beans, black beans, or chili beans.
  • Onion chopped – this was also already chopped and frozen from my freezer
  • Diced tomatoes with green chilies – We like using Rotel.
  • Taco seasoning – We like making our own Taco Seasoning. It is so much better than the packet.
  • Garlic salt
  • Salt and pepper to taste
  • Water – You can also use chicken broth.
  • Optional: cheese sour cream, tortilla chips, and cilantro for topping

Feel free to add a little chili powder if you would like a spicer soup.

How to make Crockpot Chicken Taco Soup:

  1. Place the chicken in the crock pot. Dump everything else in the crockpot on top.
  2. Cover and cook on low for 6 to 8 hours or cook on high for 3-4 hours.
  3. Remove chicken and shred. Place shredded chicken back in slow cooker and stir.

Each crock pot cooks a bit differently so adjust the cook time based on your slow cooker.

What to top on Chicken Taco Soup?

There are so many options to top this soup with. Here are some of our favorites:

  • dollop of sour cream
  • shredded cheese
  • cilantro
  • crushed tortilla chips
  • green onion
  • hot sauce
  • cheddar cheese
  • avocados

Note- If it is too spicy for your kids the sour cream will help with that.

Easy way to shred chicken:

There are multiple ways to shred chicken once it is done cooking. I have always taken it out of the crockpot and shred it with two forks. But did you know that you can shred chicken with your hand mixer or a kitchen-aid mixer?

Shredding chicken has never been so easy since I discovered this trick.

Stove top Directions:

Chicken Taco Soup is just as good on the stove top. Ingredients are the same and it still taste amazing. You would add in beans, corn, tomato sauce and the rest of the ingredients into the pot. The soup should simmer for about 30 minutes covered.

If I am going to be home, I like to cook Chicken Taco Soup on the stove. Either way you cook it, your family will love it.

Instant Pot Directions:

Do you have an instant pot? Using my instant pot has been a game changer for my family. We are so busy in the evening with homework, sport practices and games that we try to avoid the drive-thru. This soup is perfect for the instant pot.

  • You just place all the ingredients, except for the toppings, in the instant pot.
  • Cover and set the valve to sealing.
  • Set the pressure for 30 mins.
  • Do a quick release.
  • Remove the chicken, shred and stir back in. Then the soup is ready to serve.

We tend to eat more soups in the fall and winter months. But in my opinion I can eat soups all year round.

  • ½ onion chopped
  • 1 can diced tomatoes with green chilis (10 oz)
  • 2 Tbsp taco seasoning
  • ½ tsp Garlic salt

  • 1/2 tsp pepper
  • 1 cup chicken broth

Instructions

  • Place the chicken in the crock pot. Dump everything else in the crockpot on top.

Recipe Notes

Another idea for the recipe is to add more beans in recipes to stretch the meat. This is a great recipe to add more beans and tomatoes to and it will make your soup go further.

*Refrigerate the leftovers in an air tight container for up to 5-7 days.
