This is such an easy and delicious fall stew recipe that requires so little effort but pays off with big, bold flavors!
Apples pair perfectly with the moderate heat of this harissa spice blend. This recipe uses apple two ways: in the stew and as a crispy garnish. If you find yourself bogged down with apples this autumn, this recipe is a must-try!
How to make this easy apple and bean stew:
This recipe is so easy to prepare! You can use any variety of apple in this savory apple recipe. Try it with Granny Smith, Cortlandt, Fuji, or Gala. If you don’t want it as sweet, stick with Granny smith. If you want sweeter undertones, do Gala or even Red Delicious.
First, sauté onion and diced celery until lightly golden brown. Add diced, peeled apples. Melt butter into the pot and add the harissa powder. Once it’s fragrant–about 45 seconds–add white beans and toss to coat.
From there, simply add water, bring to a boil, and simmer for 30 minutes.
While the stew simmers, toss thinly sliced apples with oil and a bit of sumac (optional). Bake until the edges crisp up, about 20 minutes. Now, if you want true, extra-crispy apple slices, you’ll want to bake them low and slow for about an hour. This recipe does a quick bake at slightly higher temperatures to give you slices that are crisp and golden around the edges and soft in the center.

Easy Apple and Bean Stew
This easy apple and bean stew is spiced with rosey harissa and served with crispy apple slices. This is going to be your favorite savory apple recipe!
Heat oil in a wide pot over medium-high heat. Add the onion and celery and cook for 6–7 minutes until they just begin to caramelize around the edges. Season with salt and pepper.
Add the diced apples and cook for 3 minutes.
Bloom the spices:
Melt the butter into the aromatics. Once frothy, add the harissa (or spices of choice) and cook for 45 seconds until fragrant.
Simmer the stew:
Add the beans and toss to coat. Pour in the water or stock and bring to a boil. Season lightly with salt and pepper. Reduce heat and simmer, uncovered, for 30 minutes until reduced and thickened. Taste and season once more. Turn off the heat.
Bake the apple slices:
Arrange the apple slices on a baking sheet and drizzle with oil and use your fingers or a brush to lightly coat each slice with oil. Sprinkle with sumac (optional). Transfer to the oven and bake for 15 minutes. Flip and cook for an additional 10 minutes. Keep an eye on the apples to ensure they do not burn! Note: these will not be crispy apple chips but they will be crispy and golden-brown around the edges*. If you want true apple chips, bake for 1 hour at 200ºF*.
To serve:
Divide the stewed beans between shallow bowls and garnish with a few apple slices and a sprinkle of parsley. Enjoy!
If you're looking for a cannellini beans substitute, go for something similarly creamy, tender, and mild: Butter Beans if possible, Great Northern as an alternative, or Navy Beans as a last resort.
Ground chicken or turkey. If you eat meat, using ground chicken or turkey is a good swap for beans in stews, curries and casseroles. The smaller size of ground meat and the chewy texture is somewhat similar to beans. It's also a substantial and protein-rich food and easy to cook.

Baking beans can be regular dried beans or you can also use rice. Once the rice or beans have been used for baking then they are not really edible, but they can be cooled, stored in an airtight container and used time and time again for baking blind.
Due to their creamy white color, navy beans are sometimes confused with other white beans such as great northern beans, cannellini beans, or white kidney beans. Although their taste is similar, navy beans are smaller and rounder than these other varieties.
Cannellini Beans are larger and heartier than Great Northerns and are sometimes referred to as “white kidney beans” because of their traditional kidney shape. You'll often find them mixed with pinto beans.
WHY ARE BEANS HARD TO DIGEST? Beans are hard to digest due to two compounds - Lectins and oligosaccharides. Most beans contain plant compounds called lectins, a family of proteins known for targeting sugars in the body. High-lectin foods can cause gas, bloating, and cramping.
Among these, black soybeans and green beans have the lowest carbs, potentially making them better for a keto diet. On the other hand, chickpeas, pinto beans, and navy beans have high carbs.
You can give your soup more heft as well as a thicker texture by adding one of these starchy ingredients: Add a can of lentils or cannellini beans, mashing about half before you mix it in.
In soup, the liquid is the primary ingredient. Soup can be completely liquified or it can consist of other elements (like meat and vegetables) that are fully submerged in water, stock, or broth. Stew, meanwhile, is typically "chunkier." It contains just enough liquid to cover the main ingredients.
Those aromatics in the pot will revolutionize the beans' final flavor. The aromatics I tend to use are onions, carrots, garlic, and celery, and then heartier, woodsy herbs, like rosemary, sage, and thyme, which marry beautifully with the earthy-sweet flavor of beans.
You can line it with foil and with anything heavy that won't melt (it doesn't have to be beans). If you bake a lot, then you might invest in ceramic pie crust weights: I understand you can use dried beans,rice or uncooked pasta when blind baking.
If you buy ground coffee from a grocery store, it is most likely a medium grind best suited for brewing with an automatic drip brewer. Buying ground coffee instead of whole bean is an excellent option if you're all about the "grab-and-go" coffee or hitting the snooze button one more time before you start your day.
Navy beans, also known as Haricot Beans, are the beans used in commercially produced canned baked beans. They are white beans that are slightly smaller than Cannellini beans.
