It’s not always easy to find time to bake fancy desserts in the kitchen, so when I got a copy of Lauren Grier’s cookbook Modern Comfort Cooking: Feel-Good Favorites Made Fresh and New and was flipping through the gorgeous pages, these champagne marshmallow treats jumped out at me.

What I love most about this recipe is that, in the book, Lauren describes her mother always saving birthday’s by being able to make treats at the drop of a hat, and how this recipe is great for any impromptu party or celebration where a cake just won’t do, it totally pulled at my heart strings, and my desire to make a delicious treats, fast!

What ingredients do you need for champagne rice krispie treats?

The biggest difference in this recipe and your standard rice krispie treat recipe is the champagne obviously! To make these treats extra celebratory, you are basically creating a champagne butter (um, how good does that sound!?).

I'm here to help you celebrate the holidays with this recipe for 5 ingredient champagne rice krispie treats which would be a fantastic New Years dessert!

Servings: 10 treats

Ingredients

  • 6 tbs unsalted butter
  • 1/4 cup champagne
  • 6 cups mini marshmallows
  • 1/2 tsp vanilla extract
  • 6 cups crisped rice cereal

Instructions

  • Line a 9 x 9 baking dish with foil. Spray with non stick cooking spray and set it aside.

  • In a large skillet preheated to medium heat, melt the butter. Add the champagne, stir and let it simmer for about a minute. Next add the marshmallows and vanilla extract. Stir the marshmallows until completely melted, or about 4 minutes.

  • Remove the skillet from the heat and add-in the cereal. Stir to combine. Pour the mixture into the prepared baking dish. Press the mixture into the dish and let it cool.

    These are wonderful! We wouldn’t stop at just one either:D We don’t have any plans this year, as we got a cold, and are now under the blankets, trying to recover! At least we got to see some Holiday Season movies and enjoy a few treats (as much as we can):) Hopefully the New Year will find us back standing on our feet lol 🙂
